Guest guest Posted January 2, 2001 Report Share Posted January 2, 2001 * Exported from MasterCook II * Spinach & Tomatoes w/Capellini Recipe By : 500 Practically Fatfree One Pot Recipes Serving Size : 6 Preparation Time :0:10 Categories : Lowfat Main Dishes Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 quarts water 8 ounces uncooked capellini 2 tablespoons broth 2 cloves garlic -- minced 3 1/2 cups low-sodium canned tomatoes, chopped -- juice reserved 2 cups chopped fresh spinach 1 1/2 teaspoons dried basil 3 tablespoons capers -- drained 1/2 teaspoon ground black pepper 2 tablespoons grated nonfat Parmesan 1. Bring water to a rapid boil in a large saucepan. Cook capellini for 5 minutes. Drain well in a colander. 2. Combine capellini, broth, garlic, tomatoes with juice, spinach, basil, capers, and black pepper in a saucepan. Simmer, stirring frequently, for 5 minutes. 3. Transfer to a large platter, top with Parmesan, and serve.
