Guest guest Posted January 2, 2001 Report Share Posted January 2, 2001 * Exported from MasterCook II * Rotelle Vegetable Soup Recipe By : 500 Practically Fatfree One Pot Recipes Serving Size : 8 Preparation Time :0:20 Categories : Lowfat Pasta Soups Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons broth 3 cloves garlic -- minced 1 medium green bell pepper -- diced 1 medium zucchini -- diced 1 medium carrot -- diced 2 cups cooked or low-sodium canned chickpeas -- liquid reserved 2 cups low-sodium canned tomatoes -- drained & chopped 1 cup low-sodium canned tomato sauce 1 teaspoon dried thyme 4 cups low-sodium vegetable broth 3 cups water 1 cup uncooked rotelle 1/4 teaspoon ground black pepper 2 tablespoons grated nonfat Parmesan 1. Heat broth in a large pot. Add garlic, bell pepper, zucchini, and carrot and saute for 4 minutes. 2. Add chickpeas with liquid, tomatoes, tomato sauce, thyme, vegetable broth, and water. Bring to a boil, add rotelle, and simmer until pasta is just tender, about 8 minutes. Stir in black pepper. 3. Serve topped with Parmesan.
