Guest guest Posted January 2, 2001 Report Share Posted January 2, 2001 * Exported from MasterCook II * Great Northern Bean & Red Pepper Stew w/Rosemary Recipe By : 500 Practically Fatfree One Pot Recipes Serving Size : 4 Preparation Time :0:23 Categories : Beans Lowfat Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/4 cups vegetable broth 1 medium onion -- chopped 2 cloves garlic -- minced 2 cups low-sodium canned Great Northern beans, rinsed & drained 1/2 teaspoon dried rosemary 1/2 teaspoon ground black pepper 1 cup canned roasted red bell peppers, drained and cut into thin strips 1 tablespoon balsamic vinegar 1. Heat 1/4 cup broth in a large saucepan. Add onion and garlic, and saute until onion begins to soften, about 3 minutes. 2. Add remaining broth, beans, rosemary and black pepper. Bring to a boil, reduce heat, and simmer, stirring occasionally, for 10 minutes. 3. Stir in roasted peppers and balsamic vinegar, and heat through, about 5 minutes. 4.
