Greek Peasant Stew

1/4 cup broth

2 cups chopped green beans (2 " lengths)

1 medium onion -- chopped

2 medium carrots -- sliced

3 medium stalks celery -- sliced

4 cups low-sodium canned tomatoes, chopped -- juice

reserved

3 medium potatoes -- chopped

1/4 cup chopped fresh parsley

1 teaspoon dried dill weed

2 teaspoons dried oregano

1/2 teaspoon ground black pepper

3 cups sliced zucchini

 

1. Combine broth, beans, onion, carrots, celery, tomatoes with juice,

potatoes, parsley, dill, oregano, and black pepper in a large

saucepan. Bring to a boil, reduce heat, cover, and simmer, stirring

frequently, for 20 minutes.

 

2. Add zucchini, cover, and simmer until vegetables are just tender,

about 10 minutes.
