Guest guest Posted January 2, 2001 Report Share Posted January 2, 2001 * Exported from MasterCook II * Baked Black Eye Peas w/Tomatoes & Mushrooms Recipe By : 500 Practically Fatfree One Pot Recipes Serving Size : 6 Preparation Time :0:20 Categories : Beans Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup broth 2 cloves garlic -- minced 1 cup chopped onion 1 medium green bell pepper, cored -- chopped 1 cup sliced mushrooms 2 medium tomatoes -- chopped 1/2 teaspoon ground black pepper 2 cups low-sodium canned tomatoes, drained -- crushed 2 cups low-sodium canned black eye peas -- rinsed & drained 1. Preheat oven to 350 degrees. 2. Heat broth in a flameproof 3-quart casserole. Add garlic and onion, and saute until onion begins to soften, about 3 minutes. Add bell pepper, mushrooms, and fresh tomatoes, and cook, stirring frequently for 5 minutes. 3. Add black pepper, canned tomatoes, rice, and black-eyed peas. Cover and bake until casserole is heated through, about 45 minutes.
