Guest guest Posted December 31, 2000 Report Share Posted December 31, 2000 * Exported from MasterCook * Marinated Black-Eyed Peas Recipe By : Vegetarian Celebrations, by Nava Atlas, page 6 Serving Size : 6 Preparation Time :0:00 Categories : Beans And Legumes Salads, Vegetable Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups cooked or canned black-eyed peas 1 medium red bell pepper cut into narrow 1-Inch strips 2 scallions -- minced 3 tablespoons minced fresh parsley 1 tablespoon olive oil 2 tablespoons apple juice or cider 1/2 lemon -- juice of up to 1 -- to taste 1 clove garlic -- crushed, optional salt and freshly ground pepper -- to taste 6 servings Black-eyed peas are one of the few truly American good-luck foods for New Year's Day. Eating them on this day is traditional in the South, where a coin is sometimes cooked with the peas, foretelling riches throughout the coming year. Combine all the ingredients except lettuce leaves in a mixing bowl and let stand, covered, for an hour or 2, refrigerated, before serving, or, better yet, make a day ahead. Stir occasionally. Before serving, remove the garlic. Line a shallow serving bowl with lettuce leaves and top them with the marinated mixture.
