Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound soba buckwheat noodles 2 tablespoons soy sauce or tamari -- or to taste 2 tablespoons dark sesame oil 1 1/2 tablespoons sesame seeds 2 teaspoons rice vinegar 1/2 teaspoon freshly grated ginger 3 scallions -- sliced 6 servings Soba, or buckwheat noodles, are a must for the Japanese New Year. Dark and nutritious, these noodles are often eaten right at midnight in the belief that they will bring good luck for the new year. Break the noodles in half and cook them until al dente (watch them-they cook quickly!). In a small bowl, combine the soy sauce, oil, sesame seeds, vinegar, and ginger. When the noodles are done, drain them and put in a serving container. Toss with the soy sauce mixture and scallions. Add 2 to 3 tablespoons of water for added moistness, and toss again. Cover until ready to serve.
