Cucumber Raita

Amount Measure Ingredient -- Preparation Method

2 large cucumbers -- peeled

seeded and chopped

1 1/2 cups plain low-fat yogurt or soy yogurt

2 tablespoons chopped fresh cilantro or parsley -- up to 3

2 tablespoons minced fresh mint

OR 1 teaspoon dried mint

1/2 teaspoon ground cumin

 

6 to 8 servings

 

Raitas are yogurt-based salads that provide a refreshing contrast to spicy

dishes.

 

Combine all the ingredients in a mixing bowl. Chill before serving, then

transfer to a serving container
