Combine the flour and salt in a mixing bowl. Work about 1/2 cup water in slowly to form a soft, but not sticky, dough. Knead gently on a floured board for 5 minutes. Place back in the bowl, cover with a towel, and let rest for 30 minutes to 1 hour. Pinch off small pieces of dough to form 1 1/2-inch balls. Roll each ball out on a well-floured board to form thin 5-inch rounds. Cook on a hot griddle or dry skillet over medium- high heat on both sides, until parts of the round puff out and light brown spots form. Place on a plate or in a basket and cover with a towel until all are done. Keep covered until serving.
