2 cups whole wheat flour

1/2 teaspoon salt

An Indian bread is a must for this sort of meal, especially for scooping up

the dal (see separate recipe), and to soothe the palate between bites of

spicy food.

 

Combine the flour and salt in a mixing bowl. Work about 1/2 cup water in

slowly to form a soft, but not sticky, dough. Knead gently on a floured

board for 5 minutes. Place back in the bowl, cover with a towel, and let

rest for 30 minutes to 1 hour.

 

Pinch off small pieces of dough to form 1 1/2-inch balls. Roll each ball

out on a well-floured board to form thin 5-inch rounds. Cook on a hot

griddle or dry skillet over medium- high heat on both sides, until parts of

the round puff out and light brown spots form. Place on a plate or in a

basket and cover with a towel until all are done. Keep covered until serving.
