For many centuries and across myriad cultures, the New Year has been

designated as a feast day. Though the Hindu New Year is not celebrated at

the same time as ours, I liked the idea of using an Indian menu; even a

relatively simple meal includes a wide variety of dishes and condiments to

sample, making the meal seem a true feast, at once exotic and highly

satisfying. Interestingly the Hindu New Year meal is typically entirely

vegetarian.

 

The recipes in this menu have been simplified, that is, a bit Americanized,

by their use of ground, rather than whole spices, and oil or margarine

instead of ghee (clarified butter).

 

Contains no eggs.

 

Contains dairy products. Adapt to vegan by following the recommended

substitutions in the recipes.

 

Make-ahead suggestions for A Curry Feast

 

A day ahead:

 

• Make the Red Lentil Dal. Heat through as needed before serving

 

• The Minted Apricot Chutney can be made up to a week ahead of time. Store

in a tightly lidded jar in the refrigerator and bring to room temperature

before serving.

 

• Cook the rice for Fruited Rice.

 

• Make the Pistachio Confections.
