Spinach with Garlic

Recipe By :Molly Katzen

Serving Size : 4 Preparation Time :0:15

Categories : Stir-Fry Vegetables

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 pounds fresh spinach

2 tablespoons sesame oil

10 medium garlic cloves -- minced

soy sauce

Trim just the very tips of the spinach stems, leaving the rest intact. Wash the

spinach in several changes of cold water, until absolutely all silt and sand is

gone and the leaves are very clean. Spin dry, then finish the job with paper

towels. Make sure the spinach is dried as completely as possible.

Heat a large wok. Add oil and wait a minute or so.

Add the spinach and garlic. Stir-fry over the highest possible heat for 1 or 2

minutes, or until the spinach is completely limp and very deep green. Sprinkle

with a small amount of soy sauce at the very end.

Remove with a slotted spoon, and serve immediately.

Description:

" This dish elevates cooked spinach to new heights. The seemingly huge

quantity of garlic really works in here; the resulting flavor is

strong, but smooth and well balanced. "

NOTES : If your wok is too small to hold all the spinach at once, cook it in two

shifts. It all happens so quickly, the first batch won't have time to cool down

before the second is ready.
