Guest guest Posted December 29, 2000 Report Share Posted December 29, 2000 * Exported from MasterCook * Spinach with Garlic Recipe By :Molly Katzen Serving Size : 4 Preparation Time :0:15 Categories : Stir-Fry Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds fresh spinach 2 tablespoons sesame oil 10 medium garlic cloves -- minced soy sauce Trim just the very tips of the spinach stems, leaving the rest intact. Wash the spinach in several changes of cold water, until absolutely all silt and sand is gone and the leaves are very clean. Spin dry, then finish the job with paper towels. Make sure the spinach is dried as completely as possible. Heat a large wok. Add oil and wait a minute or so. Add the spinach and garlic. Stir-fry over the highest possible heat for 1 or 2 minutes, or until the spinach is completely limp and very deep green. Sprinkle with a small amount of soy sauce at the very end. Remove with a slotted spoon, and serve immediately. Description: " This dish elevates cooked spinach to new heights.
