Gingered Broccoli Soup w/Sesame Seeds

1 tablespoon safflower oil

1/4 cup chopped scallions

1 1/2 teaspoons minced fresh ginger or 1/2 tsp dried

4 cups chopped broccoli

1 tablespoon low-sodium tamari

1/2 teaspoon freshly ground black pepper

2 cups vegetable broth

1/2 cup orange juice

1 cup rice milk

2 tablespoons cornstarch dissolved in 2 Tbsp

orange juice

1 tablespoon toasted sesame seeds for garnish

 

Heat the oil in a large saucepan over medium heat. Add the scallion

and ginger and cook until fragrant, about 2 minutes. Stir in the

broccoli and cook 3 more minutes. Season with the tamari and pepper.

Add the stock and orange juice and bring to a boil. Reduce the heat

to medium low, cover, and simmer until the broccoli is tender, about

15 minutes. Cool slightly. Working in batches, puree the mixture in

the food processor until smooth. Return to the saucepan, stir in the

rice milk, and heat until hot but not boiling. Stir in the cornstarch

mixture and whisk until thickened. Taste and adjust the seasonings.

Garnish with the sesame seeds.
