Guest guest Posted December 27, 2000 Report Share Posted December 27, 2000 * Exported from MasterCook II * Cream of Greens Soup Recipe By : 366 Simply Delicious Dairy-Free Recipes Serving Size : 6 Preparation Time :0:00 Categories : Greens Soups Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon corn oil 1/2 cup chopped onion 1/2 cup minced celery 4 cups vegetable broth 3 cups chopped green beans 1 bay leaf 2 cups chopped fresh spinach 1 cup frozen peas 1/2 cup minced scallions 1 tablespoon minced fresh basil or 1/2 tsp dried salt and pepper 1 cup soy milk 1/2 cup chopped fresh parsley Heat the oil in a large saucepan over medium heat. Add the onion and celery and cook until softened, about 5 minutes. Add the stock, green beans, and bay leaf. Bring the soup to a boil. Reduce the heat, cover, and simmer 20 minutes. Add the spinach, peas, scallion, and basil. Season with salt and pepper to taste, and simmer 10 minutes. Discard the bay leaf. Puree the soup in a food processor, working in batches if necessary. Return the soup to the saucepan and slowly stir in the milk. Add the parsley and stir the soup over low heat until warmed to the desired temperature.
