Guess who got a new cookbook for Christmas? We had these corn cakes for

breakfast this morning and they weren’t bad.

Corn Cakes with Maple Syrup

Amount Measure Ingredient -- Preparation Method

1/2 c self-raising flour

1 c fine polenta

1/2 tsp baking powder

1 c milk

2 tbsps sour cream

corn kernels from one large cooked corn co -- about

1 cup

1 tsp salt

1/2 tsp freshly ground black pepper

4 tbsps melted butter -- (4 or 5 tbsp)

1 c maple syrup -- for serving

 

Makes 10-12 pancakes

Combine the flour, polenta and baking powder in a large mixing bowl.

Whisk in the milk, sour cream, corn kernels, salt and pepper. Allow the

polenta to soak for 1 minute.

 

Heat a non-stick frying pan over moderate heat, drizzle in some of the

melted butter, and fry 1/4 cupfuls of the mixture on both sides for 3 or 4

minutes each side, or until golden brown.

 

Serve hot with the maple syrup.

NOTES : Jo's note: The amount of salt was a bit too much (it actually

tasted salty), so I'd reduce it next time. We weren't sure they

really went with maple syrup when we had our first one, but we had

sweet chilli sauce (me) and tomato sauce (Michael) with the next

ones and that really didn't go, so we decided maple syrup was

better for the next ones!
