Middle Eastern Spinach Soup

Mediterranean Lentil Salad

Sesame Crackers

Lemon Snaps

Middle Eastern Spinach Soup is thick with potatoes or rice. Mediterranean

Lentil Salad is delicately seasoned, yet full-bodied. Together they make a

fortifying meal. Serve them with a good brand of sesame crackers (ak-mak

or lavosch), and follow them up with light, light Lemon Snaps.

 

3 DAYS AHEAD: cook lentils (step 1 of salad)

 

2 DAYS AHEAD: cook potatoes or rice for soup / clean spinach / assemble

salad, short of adding bell peppers or herbs (this can also be done 1 day

ahead)

 

1 DAY AHEAD: assemble soup through step 3 / make cookie dough and refrigerate

 

SAME DAY: bake cookies / heat soup and add yogurt / add peppers and herbs

to salad
