Dried Mushrooms

I've read many recipes that go by on this list, that use dried mushrooms of some

sort.

I cannot figure out why they waste time telling you to " add boiling water and

let them sit for an hour... "

 

I cut them up with scissors (if I want them in a particular shape or strip) pop

'em into a measuring cup, add enough water to cover them, then nuc 'em for one

minute, sometimes two. They're ready to use immediately.

 

Is there a reason, which I can't fathom, to reconsititute them the longer way?

Here's some quick reasons why:

 

1. People like me who don't have a microwave!

 

2. To get BOTH flavored broth and reconstituted mushrooms, thus getting a

" twofer " from an expensive product. Porcinis, morels, et al., are very

expensive. I can use the broth in that recipe, but mostly I store it to use

with something else, add a little kick to another dish. When you rehydrate

them in the microwave, you don't extract enough flavor into the liquid to do

this, since they don't sit long enough. If you don't want the broth, this

doesn't matter.

 

3. I pour the boiling water, then do the daily " get home " tasks, which takes

an hour and a half. Then cook. So the hour doesn't matter to me. If you're

the type of person to cook in a straight line, the hour will matter.
