Still Life with Menu: Chocolate Chip-Mint Cookies

Yay! Finally a cookbook of the week that, not only have I heard of, but

actually own. I had borrowed it from the library and decided it was so good

that I had to buy one. Luckily that was after the re-issue.

 

This recipe is a great favourite in our house. I think I've posted it

before, but it's worth posting again.

Chocolate Chip-Mint Cookies

3/4 c butter or margarine -- or a combination (19

1/2 c brown sugar -- packed

1/2 c granulated sugar -- (125g)

1 egg -- (125g)

1 tsp vanilla extract

1 tsp peppermint extract

1 1/2 c unbleached white flour -- (230g)

1/4 c unsweetened cocoa -- (25g)

1 tsp baking soda

1/4 tsp salt

1 c chocolate chips -- (155g)

 

Preheat oven to 350ºF (180ºC). Lightly grease a cookie sheet.

 

Cream together butter or margarine and sugars with an electric mixer at

high speed.

 

Beat in egg. Stir in vanilla and peppermint extracts.

 

Sift together the dry ingredients, and add this to the butter mixture

along with the chocolate chips. Stir until well combined.

 

Drop by rounded teaspoons onto a lightly greased cookie sheet. Bake 12 to

15 minutes at 350ºF (180ºC). Remove from the sheet immediately after

baking, and cool on a rack.

Thank you, Jo! I have a weakness for Molly's cookbooks.... bought several

of the re-issued ones,too. Never made a THING from any of her books and

keep thinking I should. I've often wondered what recipes (of hers) people

really treasure. I'm so glad to get this one from you and the others, too

(the others you haven't tried yet, right?).

 

Our library has Madison's huge book...Cooking for Everyone, I think it

is...and Bishop's - Italian Vegetarian. Both of these books just make me

drool (and are EXpensive) and I WANT EM BAD!! Wonder if anyone has cooked

from the Bishop one? ANY and more from Molly are always wanted by

me..thanks again.
