Guest guest Posted December 24, 2000 Report Share Posted December 24, 2000 * Exported from MasterCook * Velvet Corn Soup Recipe By :Mollie Katzen Serving Size : 4 Preparation Time :0:20 Categories : Soups, Stews & Chilis Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 pound dried Chinese black mushrooms 5 cups boiling water 6 cups uncooked corn 1 teaspoon salt -- or to taste 1 teaspoon soy sauce freshly ground black pepper -- to taste 1/2 teaspoon sesame oil -- or more to taste 2 tablespoons dry sherry Optional Garnishes: finely minced parsley, scallion greens, and/or cilantro finely minced red bell pepper Briefly rinse the dried mushrooms under running water to clean, and place them in a large bowl. Add boiling water, cover with a plate, and let stand at least 1 hour. Drain well, reserving both the mushrooms and the water, and squeezing all excess liquid from the mushrooms. Transfer the soaking water to a soup pot; store the mushrooms in a tightly covered container in the refrigerator and save for another use. (The mushrooms can also be used in Cold Chinese Mushrooms with Bean Thread Noodles which can be served with this dish.) Add the remaining ingredients, except garnishes, to the soup pot. Heat just to boiling; simmer 10 minutes. Puree until smooth in a blender or food processor. Return to soup pot, and adjust the seasonings. If you want a smoother texture, strain the puree through a fine sieve. Reheat just before serving. For a touch of contrast, garnish each bowlful with a very light sprinkling of finely minced garnishes.
