Simplest Miso Broth

Amount Measure Ingredient -- Preparation Method

1 1/2 tablespoons miso

1 cup boiling water

a few small cubes of tofu

a few very thin slices of scallion

 

Place miso in the serving bowl.

 

Add a small amount of the hot water (about 1/4 cup) and mash until the miso is

completely dissolved.

 

Add remaining water and tofu. Top with paper-thin slices of scallion.

reading the short list of ingredients. But even though the soup is

simple, the miso has a deep and complex flavor that makes a rich

broth. It is very soothing to the digestive tract. "

NOTES : Miso is a paste made from aged fermented soybeans and grains. There are

many different varieties of miso and they are often referred to by their color.

Miso is sold at Japanese groceries and at natural food stores. Experiment and

discover your favorite.

 

Because it is already fermented, miso keeps indefinitely if stored in the

refrigerator.

 

The recipe below gives proportions for one serving of miso broth. Prepare

additional servings each in its own separate bowl.
