Peppery Popovers

2 large eggs

1 cup fat—free milk

1 cup all—purpose flour

1/2 teaspoon salt

freshly ground pepper

 

Preheat the oven to 450°F. Spray an 8-cup popover pan or muffin tin with

nonstick spray.

 

With an electric mixer at medium speed, beat the eggs until frothy. Beat in the

milk, flour, salt, and pepper.

 

Spoon 1/4 cup batter into each cup. Bake 15 minutes; reduce the oven temperature

to 400°F and bake until browned, about 12 minutes

longer. Serve immediately.

NOTES : Popovers puff and rise spectacularly in the oven as the moisture in the

batter heats and turns into steam. Take care not to

open the oven door and let the steam escape while popovers are baking!
