Guest guest Posted December 23, 2000 Report Share Posted December 23, 2000 * Exported from MasterCook * Orange Madeleines Recipe By :Weight Watchers, November/December 2000 Serving Size : 12 Preparation Time :0:00 Categories : Desserts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup fat—free egg substitute 1/4 cup + 2 T confectioners’ sugar 2 tablespoons unsalted butter -- melted 1 teaspoon orange liqueur 3 tablespoons all-purpose flour 1 teaspoon grated orange rind 1 tablespoon chopped bittersweet chocolate Preheat the oven to 350°F. Spray a 12—shell Madeleine mold with nonstick cooking spray. Whisk the egg substitute in a large bowl until frothy. Whisk in the confectioners’ sugar, butter, and liqueur, then stir in the flour and orange rind. Spoon 1 tablespoon of the batter into each shell of the Madeleine mold. Bake until golden-brown, 11-12 minutes. Cool in the mold on a wire rack 1 minute, then remove the madeleines from the mold and cool completely on the rack. Put the chocolate into a microwavable bowl. Microwave at 50 percent power about 1 ½ minutes, stirring every 30 seconds, until melted. Using a small spoon, drizzle chocolate over the cooled madeleines.
