That is why it was created. Some of the cycles on a bread machine don't have

enough rises to get the correct rising out of Active Dry yeast. You really need

it to rise quite a few times for the yeast to work really well. Bread Machine

yeast was created for machines that have only one or two rises.

I agree too. we can use quick but it just won't rise as much. active dry and

yeast made for the bread machine do perform about the same in the standard

cycle.

 

i wonder why they said that about " quick " - unless.... I haven't use the quick

cycle on my machine yet. afraid i'll get another door stop. but those recipes do

say quick or abm yeast.

 

most of the books i have, the intro say " by yeast i mean.... " and most say

active dry but you can you abm yeast sold in bulk. I'm new to the abm baking

but so far i've only made two loaves that even the crows won't eat.

 

if you make that mincemeat loaf i sent - advice: i added 3/4 of the liquid

mentioned in the recipe and then added the mincemeat (undrained; just strained

with a veg-hole spoon). four letter words " Wett! " if you try it use half water

add the mincemeat and add water if needed near end of first knead. (it's better

than adding flour.) bob loved the flavor but i couldn't get my teeth into that

texture.
