Guest guest Posted December 22, 2000 Report Share Posted December 22, 2000 * Exported from MasterCook * Peanut Butter Oat Bars Recipe By :More Soy Cooking - Marie Oser Serving Size : 21 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- olive oil spray Bars 1 1/3 cups rolled oats 1 1/3 cups whole wheat pastry flour 1/3 cup yellow cornmeal 1 teaspoon baking soda 1 teaspoon nonaluminum baking powder 1 teaspoon ground cinnamon 1/2 teaspoon sea salt 1 12.3 oz package lite silken tofu 1/2 cup Lighter-Bake 1/3 cup peanut butter, smooth or chunky 1 1/2 cups evaporated cane juice 1/2 cup enriched vanilla 1% fat soymilk 1 tablespoon pure vanillla extract Fudge Frosting 1 1/2 cups powdered sugar 3/4 cup cocoa powder 1/3 cup enriched vanilla 1% fat soymilk 2 teaspoons pure vanilla extract Preheat oven to 350F. Spray 9 x 13-inch baking pan with oil. For the bars: In a large bowl, combine the oats, pastry flour, cornmeal, baking soda, baking powder, cinnamon, and salt; set aside. Place tofu in food processor and blend until smooth. Add LIghter Bake, peanut butter, and evaporated cane juice. Pulse to mix; then blend. Add soymilk and vanilla and process until smooth. Make a well in the dry ingredients and fold in the tofu mixture without overbeating. Pour into prepared pan and bake 40 minutes,or until tester comes out clean. Set aside to cool. For the frosting: Sift powdered sugar and cocoa into a medium bowl. Stir in soymilk and vanilla. If frosting is too thick, add a tablespoon or so of soymilk. Spread evenly over cooled baked dough; then chill 30 minutes to set frosting before cutting into bars.
