Lemon Pudding and Pie Filling

2 12.3 oz packages lite silken tofu

1 cup evaporated cane juice

plus

2 tablespoons evaporated cane juice

1 tablespoon cornstarch

2 tablespoons rice butter spread

1/4 cup fresh lemon juice

1/4 teaspoon pure vanilla extract

 

Place tofu in food processor and blend. Add evaporated cane juice and

cornstarch and blend. Add the remaining ingredients. Process until smooth.

Pour into a 2-quart bowl, cover, and refrigerate. Serve well chilled.

" This richly flavored lemon pudding comes together in a few minutes.

Or pour into a prebaked pie shell for a lovely lemon pie. Chill

several hours or overnight. "
