Guest guest Posted December 21, 2000 Report Share Posted December 21, 2000 * Exported from MasterCook * Goat Cheese Rounds With Pepper And Herbs Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 113 Serving Size : 6 Preparation Time :0:00 Categories : Appetizers And Snacks Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 11 ounces goat cheese log -- such as Montrachet 6 thyme sprigs OR 3 rosemary sprigs 2 cloves garlic -- sliced Coarsely milled black pepper Extra virgin olive oil SERVES 6 TO 8 Measurements aren't crucial; the point is to bathe the cheese in herbs and a fruity olive oil - which can be used in a salad dressing or in cooking. Slice the cheese into 1/2-inch rounds and set them in a serving dish. Pull the leaves off half the thyme sprigs or chop a teaspoon of rosemary and scatter it over the cheese. Tuck in the garlic, grind on the pepper, and intersperse the remaining herbs among the rounds. Drizzle generously with oil, cover, and let stand several hours if time allows.
