Guest guest Posted December 21, 2000 Report Share Posted December 21, 2000 * Exported from MasterCook * Spirited Chocolate Chip Squares Recipe By :More Soy Cooking - Marie Oser Serving Size : 16 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- olive oil spray 1 cup dried apricots -- snipped to bite-size pieces 1/2 cup dried cranberries 1/2 cup apricot brandy 2 1/3 cups whole wheat pastry flour 2/3 cup yellow cornmeal 1 teaspoon baking soda 1 teaspoon nonaluminum baking powder 1 teaspoon ground cinnamon 1/2 cup dairy-free chocolate chips 1 12.3 oz package lite silken tofu 1/2 cup unsweetened applesauce 2 cups evaporated cane juice 1/4 cup fresh-squeezed orange juice 1 tablespoon orange zest 1 teaspoon pure vanilla extract ground cinnamon and nutmeg Preheat oven to 350F. Spray a 9 x 13-inch naking pan with oil. Combine the dried fruit with the brandy in a small saucepan over low heat. Simmer fruit 5 minutes, or until brandy is absorbed. Remove from heat and set aside. Mix the pastry flour, cornmeal, baking soda, baking powder, cinnamon, and chocolate chips in a large bowl. Set aside. Place tofu in food processor and blend. Add applesauce and evaporated cane juice; blend. Add orange juice, zest, and vanilla to tofu mixture and process until smooth. Make a well in the center of the dry ingredients. Quickly fold in the liquid ingredients annd add the brandied fruit. Pour into prepared pan; sprinkle with cinnamon and nutmeg. Bake 30 minutes, or until tester comes out clean. Top with Hip Whip.
