Guest guest Posted December 21, 2000 Report Share Posted December 21, 2000 * Exported from MasterCook * Strawberry Mango Cobbler Recipe By :More Soy Cooking - Marie Oser Serving Size : 16 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Cobbler 1 cup apple juice concentrate 1 16 oz package frozen mango chunks 1 16 oz package frozen whole strawberries 2 cups sliced dried peaches 1/4 cup ginger brandy 2/3 cup Sucanat 1 tablespoon cornstarch 1 tablespoon cold water Topping 1/2 cup rolled oats 1/3 cup walnuts 1/3 cup whole wheat pastry flour 1/2 cup Sucanat or brown sugar 2 tablespoons olive oil 2 tablespoons liquid Fruitsource Preheat oven to 350F. For the cobbler: In a stovetop- and oven-safe 5-quart casserole, thaw the juice concentrate over medium heat. Add mango chhunks and strawberries and cook until the fruit is almost thawed. Add peaches, ginger brandy, and Sucanat. Cook mixture 5 minutes, stirring frequently. In a small bowl, blend the cornstarch with water and add to the fruit. Cook mixture about 5 minutes. For thw topping: Place the oats, walnuts, flour, and Sucanat in the bowl of food processor and process to mix. While motor is running, pour oil and Fruitsource through feed tube. Process until mixture is crumbly but holding together. Spriinkle over top of fruit and bake, uncovered, for 25 minutes.
