Vegan Eggnog

Amount Measure Ingredient -- Preparation Method

2 packages silken regular (10 oz) or low-fat tofu

2 cups vanilla soymilk or rice milk

4 teaspoons vanilla extract

1/4 cup sugar

2 tablespoons brown sugar

1/4 teaspoon ground turmeric

1/2 cup to

1 cup rum or brandy -- optional

nutmeg

 

In a blender or food processor, combine all ingredients except nutmeg; blend

thoroughly, stopping occasionally to scrape down sides. Serve well-chilled and

dusted with nutmeg. Serves about 8 (generously).

 

Tastes like the real McCoy; even our non-veg friends were 'fooled'.....
