Tomato-Avocado Salsa

1 avocado -- peeled & diced

1 ripe, firm tomato -- seeded & finely chopped

2 scallions -- (to 3) including half of the greens, thinly

sliced

1 jalapeno chile pepper -- seeded & finely diced

OR 2 serrano chiles

1 clove garlic -- minced

salt

a few drops sherry vinegar or apple cider

vinegar

1 tablespoon chopped cilantro

 

Combine the avocado, tomato, scallions, chile, and garlic in a bowl. Add 1/4

teaspoon salt and the vinegar to bring up the flavors. Stir in the cilantro and

let the salsa stand for 20 minutes before serving for the flavors to merge.
