Guest guest Posted December 20, 2000 Report Share Posted December 20, 2000 * Exported from MasterCook * Glazed Blueberry Surprise with Orange Chocolate Glaze Recipe By :More Soy Cooking - Marie Oser Serving Size : 16 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- olive oil spray Cake 2 cups whole wheat pastry flour 1/3 cup soy flour 1/2 cup yellow cornmeal 1 teaspoon baking soda 1 teaspoon nonaluminum baking powder 1 teaspoon ground cinnamon 1/4 teaspoon sea salt 1 1/2 cups evaporated cane juice 1/3 cup dried blueberries 1/2 cup chopped pecans 1 1/4 cups firm lite silken tofu 1/2 cup unsweetened applesauce 1/3 cup liquid Fruitsource 1/2 cup freshly squeezed orange juice 1 teaspoon orange blossom water 1 teaspoon pure vanilla extract zest from 1 medium orange 1 tablespoon egg replacer powder 1/4 cup water 1/4 cup soy grits Orange Chocolate Glaze 1 1/4 cups powdered sugar 1/4 cup Wonderslim cocoa 1/4 cup liquid Fruitsource 1/2 teaspoon orange blossom water 1/2 teaspoon pure vanilla extract 1/4 cup orange juice (approximately) Preheat oven to 350F. Spray 10-inch tube pan with oil. For the cake: Combine pastry flour, soy flour, cornmeal, baking soda, baking powder, cinnamon, salt, evaporated cane juice, blueberries, and pecans in a large bowl and set aside. Place tofu in food processor and blend. Add applesauce and Fruitsource, pulse to mix, then blend. Add the orange juice, orange blossom water, vanilla, and zest and process. In a small bowl, whisk egg replacer powder with water and add to the tofu ixture. Make a well in the center of the dry ingredients and quickly fold in the liquid ingredients, adding in the soy grits in the process. Pour into prepared pan; bake 45 minutes, or until tester comes out clean. For the glaze: Sift sugar and cocoa into a medium bowl. Warm Fruitsource in the microwave 25 seconds, or in a small saucepan for 1 minute, and whisk into the cocoa mixture. Add orange blossom water and vanilla. Add the orange juice by the tablespoonful until you reach the right consistency. The glaze should fall from spoon with a ribbonlike quality and harden at room temperature.
