Creamy Rice Pudding

2 cups water

1/2 teaspoon sea salt

1 cup raw white rice

3 cups enriched vanilla 1% fat soymilk

2 tablespoons rice butter spread

1 12.3 oz package lite silken tofu

2 cups evaporated cane juice

2 tablespoons cornstarch

1 tablespoon pure vanilla extract

ground cinnamon for ganish

 

Preheat oven to 350F.

 

Bring water and salt to a boil in a medium saucepan. Add rice, stir, and bring

to a second boil. Reduce heat to low, cover, and simmer 20 minutes, until water

is absorbed. Scrape cooked rice into a stovetop- and oven-proof 5-quart

casserole dish. Add soymilk and rice spread and cook mixture over medium heat,

stirring occasionally.

 

Place tofu in food processor and blend until smootb. Add evaporated cane juice,

cornstarch, and vanilla; process. Add tofu mixture to rice, stirring to blend.

Sprinkle generously with cinnamon. Bake, uncovered, 25 minutes. Serve warm, or

cover and refrigerate.

Hi, Marita! " Evaporated cane juice " is just unbleached cane sugar. If you

don't object to white sugar, you can use that.
