Guest guest Posted December 20, 2000 Report Share Posted December 20, 2000 * Exported from MasterCook * Chocolate Streusel Cake Recipe By :More Soy Cooking - Marie Oser Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- olive oil spray Streusel 2/3 cup dairy-free chocolate chips 1/3 cup chopped pecans 1/4 cup brown sugar 1 tablespoon unbleached flour 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg Cake 3 cups whole wheat pastry flour 1/2 cup yellow cornmeal 1 1/2 teaspoons baking soda 2 teaspoons nonaluminum baking powder 1 teaspoon ground cinnamon 1/4 teaspoon sea salt 1 12.3 oz package lite silken tofu 1/2 cup unsweetened applesauce 1 1/2 cups evaporated cane juice 2 teaspoons pure vanilla extract 1/2 cup enriched vanilla 1% fat soymilk Preheat oven to 375F. Spray 10-inch Bundt pan with oil. For the Streusel: Place chocolate chips in food pprocessor and pulse to chop coarsely. Add remaining streusel ingredients and pulse to mix. Do not process to a fine crumb, but instead create chunky mixture. Set aside. For the cake: Combine the pastry flour. cornmeal, baking soda, baking powder, cinnamon, and salt inn a large bowl and set aside. Place tofu in food processor and blend until smooth. Add applesauce and blend. Add the remaining ingredients, processing until smooth. Make a well in the flour mixture and fold tofu mmixture in quickly. Do not overbeat. Pour 1/3 of the batter into the prepared pan and top with the streusel mix. Pour remaining batter over streusel and bake for 40 minutes or until tester comes out clean.
