Guest guest Posted December 20, 2000 Report Share Posted December 20, 2000 * Exported from MasterCook * Chocolate Banana Cake Recipe By :More Soy Cooking - Marie Oser Serving Size : 16 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- olive oil spray 2 cups spelt flour 1/4 cup soy flour 2/3 cup Wonderslim cocoa 2 tablespoons flaxseed meal 2 tablespoons cornstarch 1 teaspoon baking soda 1 teaspoon nonaluminum baking powder 1 teaspoon ground cinnamon 1/2 teaspoon sea salt 1 12.3 oz package lite silken tofu 1/4 cup Lighter Bake 3/4 cup mashed banana (2 medium) 1 1/4 cups evaporated cane juice 1/2 cup enriched 1% fat soymilk 1 tablespoon pure vanilla extract Preheat oven to 350F. Spray a 9 x 13-inch baking pan with oil. In a large bowl, combine the spelt flour, soy flour, cocoa, flaxseed meal, cornstarch, baking soda, baking powder, cinnamon, and salt. Set aside. Place tofu in food processor and blend. Add Lighter Bake and mashed bananas; blend. Add the remaining ingredients and process thoroughly. Make a well in the dry ingredients and fold in the liquid mixture without overbeating. Pour into prepared pan and bake 35 minutes, or until tester comes out clean. Set aside to cool.
