Guest guest Posted December 20, 2000 Report Share Posted December 20, 2000 * Exported from MasterCook * Golden Roasted Potatoes With Chile Mayonnaise Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 113 Serving Size : 4 Preparation Time :0:00 Categories : Appetizers And Snacks Potatoes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large russet potatoes -- about 1 pound Vegetable oil Salt Red Chile Mayonnaise (see below) SERVES 4 Jody Apple, a bold and fearless cook from New Mexico, serves these golden potatoes with mayonnaise made red with her homegrown chiles. Preheat the oven to 400F and lightly oil a baking dish. Neatly peel the potatoes with a paring knife and cut them lengthwise into quarters or sixths if very large. Toss them with just enough oil to coat and season with salt. Bake until they're tender and covered with a golden crust, about an hour, turning them a few times so that they color evenly. Serve with the mayonnaise. Red Chile Mayonnaise: Stir 1 or more teaspoons ground red chile, to taste, into 1 cup mayonnaise.
