Banana Fudge Pudding

2 12.3 oz packages lite silken tofu

2 medium bananas

1 1/2 tablespoons lemon juice

1/3 cup unsweetened cocoa

plus

2 tablespoons unsweetened cocoa

1 cup liquid Fruitsource

2 tablespoons pure vanilla extract

 

Place tofu in food processor and blend. Break banana into pieces and add to the

tofu with the lemon juice.

 

Place cocoa in a medium bowl. Place Fruitsource in a glass measuring cup and

microwave for 60 seconds or until hot--be careful not to let Fruitsource boil

over. Or heat in a saucepan for 2 minutes over medium-low heat. Whisk hot

Fruitsource into cocoa powder and add to tofu mixture allong with vanilla;

blend. Pour into a 2-quart bowl, cover, and refrigerate at least 1 hour (best

to allow flavors to develop overnight). Serve with Hip Whip.
