I'll be posting desserts for the rest of the week. Thanks Kathleen, for

answering the question about sweet beans. They're usually available - frozen,

in 1 lb bags - at health food stores and some well-stocked grocery stores. I

highly recommend them!

Baked Butterscotch Pudding

3 tablespoons rice butter spread

1 1/2 cups firmly packed brown sugar

plus

1/2 cup firmly packed brown sugar

1 cup enriched vanilla 1% fat soymilk

1 12.3 oz package lite silken tofu

1 medium banana

1/4 cup strong coffee

2 tablespoons liquid Fruitsource

1 tablespoon cornstarch

2 tablespoons pure vanilla extract

1/8 teaspoon ground allspice

ground cinnamon and ground nutmeg for

garnish

 

Preheat oven to 350 F.

 

In a medium saucepan, melt rice butter spread over moderate heat, and stir in

the 1 1/2 cups of brown sugar. Cook mixture until smooth and bubbling, stirring

frequently, about 5 minutes.

 

Warm soymilk in microwave and add to sugar mixture, stirring until sugar has

dissolved, about 2 minutes.

 

Place tofu in food processor and blend; add remaining 1/2 cup of brown sugar and

process. Break banana into pieces and add with the sugar/soymilk mixture; blend

about 2 minutes. Add remaining ingredients and process until smooth. Pour into

a 2-quart oven-proof bowl, sprinkle with cinnamon and nutmeg, and place in

preheated oven. Bake 30 minutes. Serve warm, or chill several hours or

overnight.
