Guest guest Posted December 18, 2000 Report Share Posted December 18, 2000 * Exported from MasterCook II * Applesauce Bread Pudding Recipe By : Innkeeper's Best Lowfat Breakfasts Serving Size : 12 Preparation Time :0:00 Categories : Breakfast Fruit Lowfat Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- nonstick cooking spray 16 slices cinnamon or raisin bread 2 cups applesauce 1 cup brown sugar 4 teaspoons cinnamon 1/2 teaspoon nutmeg 1 cup raisins -- optional 3 cups skim milk 4 eggs 1 tablespoon vanilla Preheat oven to 350 degrees. Fit half of the bread on the bottom of a 3-quart glass baking dish which has been sprayed with nonstick cooking spray. Cut bread to fit as necessary. Spread applesauce on top. Mix brown sugar, cinnamon, and nutmeg and sprinkle on top of applesauce, followed by raisins, if desired, and remaining bread. In a separate bowl, beat milk, eggs, and vanilla. Pour over ingredients in baking dish. (May be prepared in advance to this point and refrigerated, uncovered.)
