Guest guest Posted December 18, 2000 Report Share Posted December 18, 2000 * Exported from MasterCook * Creamy Spinach and Potato Soup Recipe By :More Soy Cooking - Marie Oser Serving Size : 10 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons olive oil 1/4 teaspoon crushed red pepper 1 tablespoon grated fresh gingerroot 6 cloves garlic -- minced 1 large stalk celery, with leaves -- chopped 1 6 oz package veggie Canadian bacon -- diced 3 cups peeled, diced potatoes 1/3 cup dry sherry plus 1/4 cup dry sherry 4 cups chicken-flavor vegetarian broth -- boiling 1 6 oz package baby spinach 1 12.3 oz package lite silken tofu 1 cup enriched 1% fat soymilk 1/2 cup nutritional yeast 1 tablespoon cornstarch 2 tablespoons cold water 1/3 cup mellow white miso 1/2 teaspoon dried marjoram 1/2 teaspoon lemon pepper 1 large shallot -- minced In a 5-quart saucepan, warm oil and crushed pepper over medium-high heat for 1 minute. Add gingerroot, onion, shallot, celery, and veggie bacon. Saute 5 minutes, stirring frequently. Add the potatoes and cook mixture 8 minutes. Add the 1/3 cup sherry and cook 2 minutes, then add the hot broth and spinch. Reduce heat to medium low and cook 15 minutes, or until the potatoes are tender. Place the tofu in food processor and blend until smooth. Add soymilk and nutritional yeast and blend. In a small bowl, mix the cornstarch and water and add to the tofu; process. Add the tofu mixture to the soup, stirring to blend. Simmer 5 minutes. In a small bowl, cream the miso with the 1/4 cup sherry and add with the marjoram and lemon pepper.
