Guest guest Posted December 18, 2000 Report Share Posted December 18, 2000 * Exported from MasterCook * Creamy Corn Chowder Recipe By :More Soy Cooking - Marie Oser Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons olive oil 1/4 teaspoon crushed red pepper 8 cloves garlic -- minced 1 large yellow onion -- chopped 1 large stalk celery, wiith leaves -- chopped 1 cup diced hickory baked tofu 1 1/2 cups diced peeled potatoes 1/2 cup chardonnay, or other white wine 2 cups chicken-flavor vegetable broth -- boiling 1 16 oz package frozen corn -- thawed 1 14 1/2 oz can creamed corn 1 12.3 oz package regular silken tofu 1 cup enriched 1% fat soymilk 3/4 cup nutritional yeast 2 teaspoons lemon pepper 1/2 teaspoon ground sage 1 tablespoon tamari soy sauce 1 teaspoon dried thyme 1 tablespoon cornstarch 2 tablespoons cold water cayenne salsa (optional) Warm oil and crushed pepper in a 6-quart saucepan over medium-high heat for 1 minute. Add the garlic, onion, celery, and diced tofu and saute 3 minutes. Add potatoes and cook mixture 8 minutes, or until the potatoes are softening. Add wine and broth. Cook mixture, stirring occasionally, 5 minutes. Add thawed corn and creamed corn. Reduce heat to medium low and simmer. Place silken tofu in food processor; blend, then add the soymill, yeast, lemon pepper, sage, and tamari and blend until smooth. Add the tofu mixture to the soup along with the thyme and stir to blend. In a small bowl, blend coornstarch and cold water. Stir into soup and simmer 10 minutes, stirring occasionally. Add several dashes of cayenne and simmer until ready to serve. Serve with a dollop of salsa, if desired.
