Mexicali Brown Rice

1 cup brown rice

2 1/2 cups chicken-flavor vegetarian broth -- boiling

1/4 cup sliced scallions

1 medium tomato -- chopped

1 1/2 tablespoons lime juice

1 1/2 teaspoons tamari lite

1 tablespoon nutritional yeast

1 teaspoon dried cilantro

 

Combine rice with boiling broth in a medium saucepan. Stir, bring to a second

boil, reduce heat, cover and simmer for 35 minutes, stirring occasionally. Add

remaining ingredients and continue to simmer mixture 8 to 10 minutes, or until

broth is absorbed and rice is tender.
