If you're unsure of your guests' tastes, substitute ordinary broccoli. Heat the oil in an extra-large skillet or a wok. Add the garlic and sauté over moderate heat for 1 minute, or until golden. Add the wine. Stir the broccoli rabe or broccoli in quickly. Sauté covered, lifting the lid to stir frequently, until bright green and tender but still firm. Season to taste with salt and pepper.
