Sautéed Broccoli Rabe

2 tablespoons olive oil

2 cloves garlic -- minced, up to 3

1/4 cup dry white wine

1 1/2 pounds broccoli rabe or broccoli -- trimmed

and cut into large bite-sized pieces

salt and freshly ground pepper -- to taste

 

8 to 10 servings

 

According to the Frisaris, this dish is quite typical for Christmas Eve

dinner, but bear in mind that while many people consider broccoli rabe a

delicacy others may be put off by the bitter flavor. If you're unsure of

your guests' tastes, substitute ordinary broccoli.

 

Heat the oil in an extra-large skillet or a wok. Add the garlic and sauté

over moderate heat for 1 minute, or until golden. Add the wine. Stir the

broccoli rabe or broccoli in quickly. Sauté covered, lifting the lid to

stir frequently, until bright green and tender but still firm. Season to

taste with salt and pepper.
