Are you ready for a little cheesy decadence? The photo is a little dark. It's a

sweet potato and cauliflower casserole or side dish. The sauce is ready-to-eat

alfredo. Top with shredded cheddar - broil until brown and bubbly. Chive for

garnish and contrast.

 

 

The microwave cooks; and the broiler browns.

Cheesy Sweet Potato and Cauliflower (microwave)

2 large orange-fleshed sweet potatoes

1 small head of cauliflower -- broken into florets

5 tablespoons milk

11 ounces ready-made cheese sauce (Alfredo)

3 tablespoons snipped fresh chives

3 ounces Grated cheddar cheese

 

MICROWAVE: Cook the sweet potatoes whole with their skins on high in the

microwave for 10 to 15 minutes, until tendter. Set aisde. Put the cauliflower in

a microwave-proof bowl with a good splash of water. Cover with plastic film and

microwave for 5 minutes on high.

 

LAYER AND BROIL: Preheat the broiler. Cut the potaotes into wedges and lay them

in the bottom of an ovenproof dish. Drain the cauliflower florets and spoon over

the potatoes. Stir the milk int the cheese sauce, then warm in the microwave

according to the instructions on the package. Stir in the chives, then pour over

the cauliflower and potatoes. Sprinkle with the cheddar and broil for 3 to 4

minutes, until golden and bubbling.
