Guest guest Posted December 15, 2000 Report Share Posted December 15, 2000 xpost - mc/veg/elf Red and green for a holiday meal... * Exported from MasterCook * Pasta with Scallion and Herbed Tomato Topping Recipe By :Abby Mandel's Cuisinart Classroom (1984 Harper) Serving Size : 8 Preparation Time :0:00 Categories : Food Processor Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup parsley -- leaves only 1 large garlic clove -- peeled 3 tablespoons salad oil 8 large scallions with green tops (6-ounces) -- cut into thirds 1 teaspoon salt freshly ground black pepper 1 1/4 pounds peeled tomatoes (about 5) -- cored or roma tomatoes -- see tip 1 teaspoon sugar 1 teaspoon dried basil 1/2 teaspoon dried oregano salt and pepper 1 pound fresh Spinach Pasta 1/2 cup kalamata olives (optional) -- drained METAL BLADE: Mince parsley in pulses. Reserve. With machine running, mince garlic by dropping it through the feed tube. Turn machine off. Add the oil, but do not process the mixture. Leave it in the work bowl. MEDIUM SLICING DISC. Slice scallions, using light pressure. Add salt and pepper, remove the mixture and reserve. Slice the tomatoes, halving them vertically to fit the feed tube if necessary. Use light pressure. Transfer them to a flat platter. Mix the sugar, basil, oregano, salt and Pepper and sprinkle the mixture over the tomatoes. Refrigerate for at least 30 minutes. ASSEMBLY: Toss the reserved scallion mixture gently with hot, drained pasta and correct the seasoning. Transfer the pasta to a shallow serving bowl, arrange the tomatoes around it and garnish with the reserved parsley and the olives. TIP: To slice roma tomatoes, cut their ends flat and slice them, using light pressure. Description: " Cuisinart.
