Manicotti " Bolognese "

1 cup TVP, ground beef style

3/4 cup beef-flavor vegetarian broth -- boiling

1 12.3 oz package lite silken tofu -- drained

3 cloves garlic -- minced

1/2 cup sliced scallions

1 10 oz package frozen chopped spinach -- thawed and drained

1 20.6 gram package Tofu Hero, Italian Herb Medley

1/4 cup soy Parmesan cheese

2 tablespoons nutritional yeast

1 8 oz package manicotti

1 26 oz jar tomato sauce

 

Preheat oven to 350F.

 

Combine TVP and boiling broth in a medium bowl and set aside.

 

Place tofu in large bowl and mash with a potato masher. Add garlic and

scalliona and stir in spinach. Add Tofu Hero, soy Parmesan, and nutritional

yeast. Add reconstituted TVP, mix thoroughly, and set aside.

 

Cook manicotti accorsing to package directions and rinse with cold water.

 

Spread a thin layer of tomato sauce evenly on the bottom of a 9 x 13-inch baking

pan. Holding each cooked manicotti open gently, stuff with filling. Do not

overfill. Lay filled manicotti in a single layer in pan, top with sauce, and

cover casserole with foil. Place in preheated oven and bake foor 30 minutes.

Remove foil, sprinkle with additional soy Parmesan cheese, if desired, and bake

for an additional 15 minutes. Let sit for 10 minutes before serving. Reheats

very well.
