Guest guest Posted December 15, 2000 Report Share Posted December 15, 2000 * Exported from MasterCook * Gnocchi Primavera Recipe By :More Soy Cooking - Marie Oser Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Gnocchi 6 medium Yukon Gold potatoes -- peeled and quartered 4 cups semolina flour mix (a blend of semolina and kamut flours) Primavera Sauce 1 1/2 teaspoons olive oil plus 1 tablespoon olive oil 1/8 teaspoon crushed red pepper 4 cloves garlic -- minced 1/2 cup thinly sliced scallions 1/4 cup chopped red bell pepper 1 medium zucchini -- cubed 1 26 oz jar fat-free tomato sauce 1 15.5 oz can Italian-style diced tomatoes 1 6 oz can tomato paste 1/3 cup white wine 2/3 cup frozen peas -- thawed 2 tablespoons capers 1 bay leaf Place potatos in a large saucepan with enough salted water to cover. Boil until tender when pieced, about 20 to 25 minutess. Drain. In a large stovetop- and oven-safe baking dish, heat 1 1/2 teaspoons oil and crushed pepper over medium-high heat for 1 minute. Add the garlic, scallions, bell pepper, and zucchini and saute 5 minutes. Add the remaining ingredients; reduce heat to low and simmer, stirring occasionally, until ready to assemble. Preheat oven to 350F. Transfer potatoes to a large bowl and mash thoroughly. Add 3 cups of the flour and knead in the bowl until a dough forms. Add more flour as necessary until the dough is no longer sticky. Divide dough into 4 pieces and turn onto a floured surface. With floured hands, roll each piece into a long cylinder about 2 inches in diameter; then cut each cylinder into 1-inch slices. With a floured fork, make an indentation in the center of each slice and with a gentle rolling motion, flip the dough over to form gnocchi. Set aside on a floured board. Fill a large saucepan with salted water and add 1 tablespoon of oil. Bring to a boil and add gnocchi, using a slotted spoon. Bring water to a second boil and lower heat to simmer. Gnocchi will rise to the top in about 15 minutes. Stir occasionally and simmer 5 minutes. Combine cooked gnocchi with sauce and bake, uncovered, for 15 minutes.
