Guest guest Posted December 14, 2000 Report Share Posted December 14, 2000 Another one- * Exported from MasterCook * Potato Latkes Recipe By :More Soy Cooking - Marie Oser Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups grated potatoes (about 4 medium) 1 medium yellow onion -- grated 1/2 12.3 oz package lite silken tofu 1/4 cup nutritional yeast 2 1/2 tablespoons whole wheat flour 2 tablespoons yellow cornmeal 1 tablespoon egg replacer powder 1 teaspoon nonaluminum baking powder 1 teaspoon sea salt 1/2 cup enriched 1% fat soymilk 1/2 cup Barbara's Potato Flakes olive oil spray 1 tablespoon olive oil Preheat oven to 200F. Place the grated potators on several thicknesses of paper towels or a clean kichen towel to drain. Then place grated potatoes and onions in a large bowl and set aside. Put the tofu in a food processor bowl and process until smooth. Add the yeast, flour, cornmeal, egg replacer powder, and salt. While processing, and with motor running, add soymilk. In a large bowl, combine the tofu mixture with the grated veggies and add the potato flakes. Mix thoroughly. Spray electric frying pan or 10-inch frying pan with olive oil cooking sprayl place over medium-high heat and add olive oil. Usine 1/3-cup measure, drop batter onto hot pan and cook pancakes, browning on both sides. Place cooked pancakes on a baking sheet and keep warm in preheated oven while cooking remaining batter, and until ready to serve.
