Peppermint Tassies

Amount Measure Ingredient -- Preparation Method

1/2 cup shortening

1/2 cup margarine

1 1/2 cups flour

1 cup sugar

1 egg

1 tablespoon milk

1 teaspoon vanilla

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon red food coloring

3/4 teaspoon peppermint extract

1 1/2 cups flour

 

Beat 1/2 CUP shortening and 1/2 CUP margarine until fluffy. Stir in 1-1/2 CUPS

flour, 1 CUP sugar, 1 egg, 1 TBL milk, 1 TSP vanilla, 1/2 TSP baking soda, 1/4

TSP salt, 1 TSP red food coloring, and 3/4 TSP peppermint extract. Beat until

well combined then stir in 1-1/2 CUPS flour.

 

Shape into two 8 " logs, wrap in plastic wrap, and chill overnight. Cut into 3/4 "

slices, then cut again into quarters. Place each quarter in an ungreased muffin

tin and press down. Bake at 375° for 8 to 10 minutes. Immediately press a large

chocolate candy drop into the center of each cookie. Cool for 1 minute before

transferring to wire racks.
