Guest guest Posted December 14, 2000 Report Share Posted December 14, 2000 * Exported from MasterCook II * Baked Apples - Sweet & Natural Recipe By : Sweet & Natural/Meredith McCarty Serving Size : 4 Preparation Time :0:00 Categories : Desserts Fruit Vegan Baking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 apples (Golden Delicious, Granny Smith, Gala or Gravenstein), cored 1/4 cup nut butter (almond, hazelnut or sesame) 1/4 teaspoon cinnamon 3 tablespoons apple juice or cider 1/4 cup currants or raisins 1. Preheat the oven to 400 degrees F. 2. With a fork, mix the nut butter and cinnamon. Only if nut butter is stiff, add the juice gradually to achieve a smooth texture. Stir in the currants or raisins. Transfer the apples to a cake pan or baking sheet. Insert the filling with a teaspoon. Pack it in with a chopstick, allowing filling to mound on top. Mix up more filling in apples, or the holes you've made, are particularly large. 3. Bake the apples until they are soft enough to be pierced easily all the way to the middle, 20 to 45 minutes depending on the variety. Variations: Nutty Raisin-Miso Stuffing - Add a teaspoon of any variety of miso to the stuffing ingredients for added depth of flavor and nutrition. For another filling, include 1/4 cup each toasted and chopped nuts and fruit preserves. Almonds with strawberry jam or apricot preserves make nice combinations. NOTES: Pippin apples tend to get mushy faster than some others, so watch for them to be done earlier. McIntosh apples bake in just 25 minutes. Hard green apples like Mutsu take the longest. I've enjoyed Jonathan, Jonagold, Cortland, Winesap, and Blushing Gold apples prepared this way, too. Don't cover the apples with foil unless you want them to fall apart and turn into delicious applesauce.
